Cook Time: 35-45 mins
Medium size pot
Green leaf lettuce
Sour cream (you can use vegan if you want)
Guacamole (refer to our guac and chips recipe!)
Tortilla Chips (refer to our guac and chips recipe!)
2 cans of black beans (15oz)
1 oz Taco seasoning (any brand will do)
1 lb of ground Beyond Meat
1 pack/box of Spanish rice
1 bell pepper
1/2 white onion
3 tablespoons of Pico de Gallo
1/2 teaspoon cayenne pepper
1 teaspoon of Himalayan salt
4 stalk of green onion
1 Roma tomato
Mexican been cheese/ vegan shredded cheese
Veggies and Rice Prep
Chop your green onion, bell pepper, and white onion separately
Bowl rice according to directions
Chop romaine and green lettuce together
Chopped roma tomato
Sit all of these ingredients to the side!
Place beyond meat in skillet on medium heat
Break meat apart and allow meat to brown for about 4 mins (be sure the move meat around in the skillet so that it doesn't burn)
Add in green onion, bell pepper, white onion, and Pico de Gallo to mix and fold
Season to your liking with cayenne pepper, Himalayan salt, and taco seasoning
Continue to fold and stir until veggies are soft and "meat" is brown
Place your delicious mix to the side.
Black Refried Beans
Open both cans and pour into a bowl.
Pour water into the bowl until beans are covered and clean the beans.
Add your beans to your pot (no water) on medium high
Add 1 tablespoon of olive oil to your beans and cooked for 3 mins (be sure to stir so that they don't stick or burn)
Add another teaspoon of olive oil and 1 teaspoon of salt.
Cook and stir for 2 mins
After the 2mins has passed, immediately smash beans with a fork
Place beans in a bowl and sit to the side
Time to put that bowl together!
Place your lettuce in the middle of your bowl
Place chips around the sides of your bowl (the lettuce will hold the chips up)
Top with "meat" mix, refried beans, sour cream, Spanish rice, chopped tomatoes, jalapeños, and shredded cheese
