3 large eggs
2 handfuls of baby spinach
1/3 cup mozzarella cheese
1 cup of pink salmon (I used canned salmon)
1/2 of a Roma tomato (diced)
Hollandaise sauce: I made mine from scratch, but you can use store bought sauce. It's just as good!
3 tablespoons of vegan butter
Whatever seasonings your heart desires!
Olive oil spray
Medium size skillet
Make sure your stove top is on medium heat
Oil your pan with olive oil spray
Scramble eggs with whisk and put eggs into the skillet (be sure not to let your eggs stick to the pan)
Add whatever seasonings your heart desires!
Continue to scramble
Add salmon to your eggs
Fold in vegan butter and 2 handfuls or baby spinach in to the eggs
Add mozzarella cheese and keep on scrambling until the cheese is melted and the spinach is cooked.
Place scramble on your plate
Top with hollandaise sauce and diced tomatoes
